Chopped, crushed or whole, canned tomatoes can make a meal, or 10.
1. Basic base
Master a traditional tomato sauce for a quick pasta. Cook chopped onion and crushed garlic in olive oil, add tinned tomatoes and simmer until it thickens and turns slightly orange. Add chopped basil or oregano, pepper and a pinch of sugar.
2. Simple soup
For a super-quick soup, fry an onion, add a tin of tomatoes, basil and chicken stock. Blend in a food processor until smooth. Return to heat. Serve with chives and low-fat cream if desired.
3. Extra flavour
Add cooked minced meat to the basic tomato sauce to make authentic bolognaise.
4. Breakfast beans
Homemade baked beans are delicious served on toast with eggs. Pan fry an onion in olive oil, add a tin of chopped tomatoes and a tin of drained cannellini beans and season with pepper and dried oregano. Place into a baking dish and bake for 30 minutes.
5. Healthy pizza
Purée tinned tomatoes to make a great pizza base. Make healthy pizzas by using pita bread for the base, topped with ham, low-fat cheese and chopped basil.
6. Salsa snack
For a quick snack, drain a tin of chopped tomatoes (or whole tomatoes drained and chopped), add chopped coriander and Spanish onion. Serve with corn chips and guacamole.
Marinate fish with tomatoes, basil, olives, capers, lemon juice, onion and garlic and bake for 20 minutes.
8. Easy casserole
Place chicken pieces into a baking tray, top with a tin of tomatoes, grilled chorizo, chopped onion, crushed garlic and oregano. Cook for 1 hour.
9. Tomato risotto
Cook chopped onion, carrot and zucchini in melted butter. Add 180g arborio rice, 450ml liquid stock and 400g can tomatoes, bring to the boil. Simmer until liquid is absorbed. Stir in cheese.
10. Quick curry
Add tomatoes and your choice of meat to curry paste (madras, rogan josh etc).
