This protein-packed ingredient is a sponge for flavour. Enjoy it in these delicious dishes.
1. Super stir-fry
Marinate tofu in 1/4 cup mirin, 2 tablespoons salt-reduced soy, 2 teaspoons grated ginger and 1 teaspoon sesame oil for 30 minutes. Slice and add to a vegie stir-fry.
2. Curry flavour
Prepare your favourite curry recipe using only vegetables and add sliced tofu during the last minutes of cooking. Stir until heated through, then serve.
3. Asian infusion
Dip slices of tofu in cornflour and shallow-fry until golden. Serve on steamed asparagus. Top with green onions and chilli, dressed with mirin, soy and sesame oil.
4. Soup booster
Add cubes of tofu to your next batch of soup and blend for a thicker, more substantial soup.
5. Tofu burger
Marinate tofu in your favourite flavours overnight. Grill the tofu - and slices of eggplant, zucchini and sweet potato – and use to make vegetarian burgers.
6. Vegie kebab
Thread squares of tofu onto skewers, alternating with button mushrooms and zucchini and capsicum pieces. Place in marinade of your choice for 1-2 hours, then cook on a hot barbecue for 10-12 minutes.
7. Vegan pie
Replace the feta in spinach pies with tofu and spray filo pastry with oil instead of brushing with butter. Even non-vegans will enjoy.
8. In a scramble
For two, whisk 5 eggs with chopped green onions and chilli. Heat a little oil in a frying pan. Add egg and cook until starting to set. Add cubes of tofu, fold omelette over and cook until set. Serve with bean sprouts and soy.
9. Roll up
Make fresh spring rolls by rolling julienned carrots and cucumber, cooked vermicelli, strips of firm tofu and mint leaves in rice-paper rounds softened in hot water. Serve with a spicy dipping sauce.
