Five asparagus spears (roughly 100g) provide about 40 per cent of your recommended daily intake for vitamin K, which may help stave off osteoporosis and Alzheimer’s disease, suggest recent studies.
Like most green vegies, asparagus is high in fibre, vitamins and minerals, and low in kilojoules (just 85kJ/20cal for 100g or five spears). It’s a particularly good source of iron and folic acid, too.
Select the best spears
Asparagus comes into season with the start of spring. Look for spears that are firm, pencil thin and bright green, as these offer the best flavour and take only seconds to cook.
Avoid thick spears, which often have a woody texture. If you do purchase some slightly thicker asparagus, try peeling the spears — this helps remove the unappealing tough exterior.
Have you tried white asparagus? Though green is the most common variety, white is more tender and sweeter, too. Growers cultivate it away from sunlight, which prevents photosynthesis, stopping the spears from turning green as they mature.
