Full ingredients list:
1/3 cup bulgur
1/3 cup warm water
1 large vine-ripened tomato, finely chopped
1/3 cup flaked almonds
1/2 bunch flat-leaf parsley leaves, chopped
1/2 cup chopped mint
6 green onions, trimmed and finely chopped
2 large cloves garlic, crushed
2 tablespoons lemon juice

Instructions and steps:
Step 1 Place bulgur into a large bowl. Pour water on top. Top with tomato. Cover with plastic wrap and set aside for 30 minutes.
Step 2 Meanwhile, toast almonds in a small non-stick frying pan over low heat for about 1 minute, stirring constantly until golden. Remove from heat.
Step 3 Add remaining ingredients to burghul mixture. Gently stir to combine and serve.
Available from most supermarkets, burghul is crushed wheat that has been boiled, dried and ground.
