Step 1 Preheat oven to 190°C. Place ham on a large ovenproof dish, on a large piece of foil.
Step 2 Using a sharp knife, remove skin, leaving a layer of fat. Score the fat on top and sides in a criss-cross ‘diamond’ pattern.
Step 3 Stud a clove in the centre of each diamond. Set aside.
Step 4 Combine juice, sugar, honey and mustard in a saucepan over medium heat. Stir until sugar has dissolved then simmer, stirring occasionally, for 15 minutes, or until glaze has thickened.
Step 5 Brush ham with the glaze and cook for 30 minutes, basting at least twice more while cooking.
Step 6 Remove the ham from the oven and stand for 10 minutes before carving. Glaze ham again just prior to serving.
