Full ingredients list:
- 500g skinless chicken breast fillets, cut into thin strips
- canola oil cooking spray
- 1 teaspoon sesame oil
- 2 cups thinly sliced carrots
- 1 head wombok (or 3 bunches pak choy or bok choy), sliced
- 300g thin egg noodles
- 1/4 cup cashew nuts
- 3 tablespoons hoisin sauce
- 2 tablespoons salt-reduced soy sauce
- 2cm chunk ginger, grated
- 1/2 cup hot water
- 1/2 teaspoon cornflour

Instructions and steps:
Step 1 Cook egg noodles according to packet directions. Drain and set aside.
Step 2 Spray canola oil in a wok over medium heat. Add chicken and cook until cooked through. Remove from pan and set aside.
Step 3 Add sesame oil, carrot and wombok to wok. Stir-fry for 5 minutes.
Step 4 Mix sauce ingredients together in a cup.
Step 5 Add chicken, noodles and cashews to wok. Add sauce. Stir well to coat. Cook 5 more minutes until sauce thickens slightly. Serve immediately.
