Full ingredients list:
- 550g rhubarb
- 1/3 cup caster sugar
- 1 teaspoon ground cinnamon
- 1 cup wholemeal flour
- 3/4 cup soft brown sugar
- 4 tablespoons ground almonds
- 4 tablespoons reduced-fat table spread
- low-fat custard and icing sugar, to serve

Instructions and steps:
Step 1 Preheat oven to 190°C. Cook rhubarb until tender (microwave in a bowl with 3 tablespoons of water). Stir in sugar and cinnamon. Place rhubarb into a large ovenproof dish.
Step 2 In a bowl, combine flour with sugar. Stir in almonds. Rub in table spread until mixture resembles coarse breadcrumbs. Sprinkle mixture evenly over rhubarb.
Step 3 Bake for 25 minutes. Serve with a dusting of icing sugar and a dollop of custard.
