Full ingredients list:
- 500g baby chat potatoes, halved
- olive oil cooking spray
- 4 x 150g skinless chicken breast fillets
- 1 lemon, cut into thin wedges
- 1/2 cup black olives
- 5 sprigs thyme leaves
- 1 bunch Dutch carrots, steamed, to serve

Instructions and steps:
Step 1 Preheat oven to 200°C. Put potatoes into a large baking dish and spray with olive oil. Bake for 20 minutes or until potatoes are a light golden brown.
Step 2 Add chicken fillets, lemon wedges, olives and thyme to baking dish. Spray with olive oil. Bake for 25 minutes or until chicken fillets are cooked through. Serve immediately with steamed Dutch carrots.
