Peppered steaks with mushrooms and polenta

Full ingredients list:
- 4 x 150g beef sirloin steaks
- 2 teaspoons black pepper
- olive oil cooking spray
- 300g button mushrooms, quartered
- 2 tablespoons balsamic vinegar
- 1/3 cup chopped flat-leaf parsley
- 1 1/4 cups polenta

Instructions and steps:
Step 1 Place steaks on a plate. Sprinkle both sides with pepper and press down lightly. Spray a large frying pan with oil. Cook steaks on medium-high heat for 3–4 minutes each side for medium-rare or until cooked to your liking. Remove from pan. Keep warm.
Step 2 Add mushrooms to pan. Cook for 5 minutes or until softened. Add balsamic vinegar and parsley. Stir to combine.
Step 3 Bring 4 cups of water to the boil in a large saucepan. Add polenta in a thin, steady stream, stirring, until combined. Reduce heat to low. Cook, stirring, for 4–5 minutes or until thick. Remove from heat. Serve polenta with steaks, mushrooms and salad.
Replace balsamic vinegar with basil pesto and the polenta with couscous. Serve with roast tomatoes.
