- 2 sheets reduced-fat puff pastry
- 1/2 pineapple, peeled, halved, cored, very thinly sliced
- 2 tablespoons brown sugar
- 1/2 teaspoon ground cinnamon
- icing sugar, to dust

Instructions and steps:
Step 1 Preheat oven to 190ºC. Cut 2 x 12cm diameter circles out of each sheet of pastry to give 4 circles. Place circles on a baking tray lined with baking paper; prick pastry with a fork. Bake in oven for 8–10 minutes or until light golden.
Step 2 Remove from oven. Arrange pineapple slices, overlapping slightly, over pastry circles, leaving a 3mm border around the edge. Mix brown sugar and cinnamon. Sprinkle 2 teaspoons of sugar mixture evenly over each tart.
Step 3 Increase oven to 220ºC. Return tarts to oven and bake for a further 8–10 minutes or until pineapple is caramelised. Serve dusted with icing sugar.
