Full ingredients list:
- 2 skinless chicken breast fillets
- olive oil cooking spray
- 8 small individual pizza bases
- 400g can diced Italian tomatoes with capsicum & onion
- 420g can red kidney beans, drained, rinsed
- 1 cup grated light tasty cheese
- 1/3 cup extra light sour cream

Instructions and steps:
Step 1 Preheat oven to 220ºC. Heat a non-stick frying pan over medium heat. Spray chicken breast fillets with olive oil. Cook for 3–4 minutes on each side or until cooked through. Cool. Shred or roughly chop chicken.
Step 2 Lightly grease 2 metal baking trays. Put pizza bases onto prepared trays. Top with diced tomato mixture, chicken, kidney beans and cheese. Bake for 15 minutes or until bases are golden and crisp and cheese is melted. Top each pizza with a spoonful of sour cream and serve.
Make this vegetarian: omit the chicken and use a can of four-bean mix instead of red kidney beans.
Small pizza bases can be found in the refrigerator section or freezer section of supermarkets.
