Lemon chicken with sweet potato mash

Full ingredients list:
- 800g sweet potato, peeled, chopped
- 1/2 cup light sour cream
- 1/2 cup skim milk
- 2 teaspoons olive oil
- 600g skinless chicken breast fillets, sliced lengthwise
- 1/4 cup lemon juice (about 2 lemons)
- 1 tablespoon honey
- 4 cups green beans, steamed
- 2 teaspoons lemon zest
- 1/4 cup shredded fresh basil

Instructions and steps:
Step 1 Boil sweet potato until tender. Drain well, then mash together with sour cream and milk. Keep warm.
Step 2 Meanwhile, heat oil in a large frying pan over high heat. Cook chicken for 2–3 minutes each side, until golden and cooked through. Pour over lemon juice and honey in the last minute of cooking and reduce slightly. Serve chicken, garnished with basil and zest, with mash and steamed green beans.
