Full ingredients list:
- 2 cups plain flour
- 1 tablespoon baking powder
- 1/4 teaspoon salt
- 1/2 teaspoon ground ginger
- 3 tablespoons sugar
- 5 tablespoons reduced-fat table spread
- 1/2 cup skim milk
- 2 x 150g tubs vanilla bean Frûche
- 2 peaches, stones removed, sliced
- 2 plums, stones removed, sliced
- mint leaves, to garnish

Instructions and steps:
Step 1 Preheat oven to 190ºC. Lightly grease a 24–26cm cake tin. In a large bowl, mix dry ingredients.
Step 2 Rub in table spread to form crumbs. Stir in milk, until just combined. Using your hands, knead into a soft dough.
Step 3 Spread dough into the base of prepared tin. Bake for 15 minutes, until lightly golden.
Step 4 Cool slightly. Cut shortcake into 16 slices. Spread half the Frûche over 8 pieces of shortcake and top with half the fruit. Top with another layer of shortcake, the remaining Frûche and fruit. Garnish with mint.
Do not assemble more than an hour before serving.
