Full ingredients list:
- 1 large brown onion, finely chopped
- 2 cloves garlic, crushed
- 2 teaspoons grated fresh ginger
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 cup couscous
- 1/3 cup chopped dried figs
- 1/3 cup chopped pistachios
- 1/2 cup coriander leaves, chopped

Instructions and steps:
Step 1 Spray a frying pan with oil and place over medium heat. Add onion and cook, stirring occasionally, for 5 minutes, or until softened. Add garlic, ginger and spices. Cook, stirring, for a further minute. Remove from heat.
Step 2 Place couscous into a large bowl, add 200ml boiling water, cover and set aside for 5 minutes. Use a fork to fluff and separate grains, then add onion mixture, figs, pistachios and coriander. Season and cool completely before using.
The stuffing must be completely cooled before stuffing turkey to prevent bacteria growing. Don't stuff the turkey too tightly, as the meat won't cook evenly and the stuffing expands when cooked. If using a frozen turkey, place on a tray and defrost in the fridge. A 4–5kg turkey will take about 70 hours (3 days) to defrost.
