- 300g rice noodles
- 400g frozen vegetables
- cooking oil spray
- 350g beef steak, trimmed, cut into thin strips
- 70g mushrooms
- 2 tablespoons green curry paste
- 2/3 cup coconut flavoured evaporated milk

Instructions and steps:
Step 1 Cook noodles according to packet instructions. Drain. Meanwhile, steam vegetables.
Step 2 Spray a frying pan with oil. Cook beef over medium heat until evenly browned, about 10 minutes.
Step 3 Add mushrooms and curry paste to pan. Cook for 3–4 minutes.
Step 4 Add coconut cream to pan and warm through. Serve noodles topped with beef and steamed vegetables.
Replace the beef with chicken, fish, prawns or tofu. And if you like your food with a kick, use red curry paste instead.
If you like your curry a little thicker, add a teaspoon or two of cornflour.
