cooking oil spray
2 green onions, chopped
2 cloves garlic, chopped
500g lean beef mince
1 carrot, diced
2 x 400g cans no-added-salt tomatoes
2 tablespoons no-added-salt tomato paste
1 teaspoon Tuscan seasoning
3 cups chopped cabbage
1 head broccoli, chopped into small florets
300g low-fat cottage cheese
1/4 cup skim milk
1/4 cup freshly grated parmesan
nutmeg, to season
150g fresh lasagne sheets (3 or 4 sheets)
green salad, to serve

Instructions and steps:
Step 1 Preheat oven to 180ºC. Spray a large frying pan with oil and place over medium heat. Gently cook green onion and garlic until soft but not browned. Add mince and brown. Add carrot and cook 5 more minutes.
Step 2 Add tomatoes, tomato paste and Tuscan seasoning. Simmer for 20 minutes. Add cabbage and broccoli and cook another 5 minutes. Season with pepper, if desired.
Step 3 Meanwhile, blend cottage cheese, parmesan (reserving 2 tablespoons), and milk in a blender until you have a smooth, creamy sauce. Season with nutmeg, to taste.
Step 4 Cover the bottom and sides of a deep casserole dish with lasagne sheets. Pour meat mixture on top. Add another layer of pasta sheets. Pour the cheese sauce over the top, and sprinkle remaining parmesan over top. Bake for 30–40 minutes, until top is golden. Stand for 5 minutes before serving with a green salad.
