Roasted sweet potato with spicy honey dressing

Full ingredients list:
- 700g sweet potato, peeled, cut into 2cm cubes
- 1/2 teaspoon dried red chilli flakes
- 1 tablespoon honey
- 1 tablespoon red wine vinegar

Instructions and steps:
Step 1 Preheat oven to 200°C. Place sweet potato in a single layer on a large lined baking tray. Spray with oil and sprinkle with chilli and black pepper, to taste. Roast for 25–30 minutes, or until golden and tender.
Step 2 Meanwhile, heat honey and vinegar in a small saucepan over low heat, stirring to combine.
Step 3 Serve sweet potato drizzled over with dressing.
