Salmon and potato salad with asparagus

Full ingredients list:
- 600g new potatoes, quartered
- 3 cups sliced asparagus
- 4 cups rocket leaves
- 3 tomatoes, quartered
- 2 tablespoons capers, drained
- 3 tablespoons grated parmesan
- light French dressing, to taste
- 180g smoked salmon, sliced

Instructions and steps:
Step 1 Bring a large saucepan of water to the boil. Add potatoes and boil for 6–8 minutes, or until tender. Add asparagus for last 2 minutes cooking time. Drain and refresh under cold water.
Step 2 In a large serving bowl, toss potatoes, asparagus, rocket, tomatoes, capers and parmesan with light French dressing.
Step 3 Transfer salad to serving bowls and top with salmon.
Make a lush sandwich! Slice open a fresh crusty baguette, spread with a bit of light mayo and layer on the ingredients.
Prepare in advance: leave potatoes and asparagus to cool, and toss all ingredients just prior to serving.
