Braised leeks with mustard sauce

Full ingredients list:
- 3 leeks, washed, white and light green parts only
- 2 sprigs fresh thyme
- 1 cup reduced-salt vegie stock
- 2 teaspoons wholegrain mustard
- finely chopped chives, to serve

Instructions and steps:
Step 1 Remove tough outer leaves from leeks and discard. Cut each leek into 4 even pieces. Place thyme and stock into a saucepan and bring to the boil. Reduce heat to medium-low and add leeks. Simmer, covered, for 25 minutes, until almost tender.
Step 2 Uncover and simmer for a further 10 minutes, or until liquid has reduced. Using a slotted spoon, transfer leeks to a serving dish. Discard thyme. Whisk mustard into stock and drizzle over leeks.Serve sprinkled with chives.
