Full ingredients list:
- 350g sweet potato peeled, cut into 2cm cubes
- 500g lean pork steaks, diced
- 1/3 cup red curry paste
- 410g can no-added-salt chopped tomatoes
- 200g sugar snap peas, trimmed
- 1/3 cup chopped coriander leaves
- 4 cups cooked basmati rice

Instructions and steps:
Step 1 Steam sweet potato until tender (about 10 minutes).
Step 2 Meanwhile, spray a frying pan with oil and brown pork over high heat. Lower heat, add curry paste and cook for 30 seconds, stirring. Add tomatoes and 1/2 cup water. Simmer for 5 minutes. Add sweet potato; cook for 2 minutes.
Step 3 Steam sugar snap peas for 2 minutes and add to pan. Scatter with coriander and serve with rice.
Add a teaspoon of grated ginger to the chopped tomatoes or, for a sweeter flavour, use a Massaman curry paste.
Note: this recipe is not suitable for those following a low-sodium diet.
