Sesame tuna with broccolini stir-fry

Full ingredients list:
270g dried udon noodles
2 tablespoons sesame seeds
4 x 150g tuna steaks
cooking oil spray
3cm piece ginger, peeled, cut into thin matchsticks
2 bunches broccolini, cut into long florets
200g snow peas, trimmed, halved diagonally
1 red capsicum, thinly sliced
2 tablespoons mirin
1 tablespoon reduced-salt soy sauce

Instructions and steps:
Step 1 Cook noodles according to packet instructions, then rinse and drain. Set aside. Spread sesame seeds onto a large plate. Press each tuna steak into seeds to coat.
Step 2 Spray a large frying pan with oil and place over high heat. Cook tuna for 1–2 minutes each side (for medium), or until cooked to your liking. Remove from pan and set aside.
Step 3 Spray frying pan with a little more oil and place over high heat. Add ginger, broccolini and 2 tablespoons water to pan and stir-fry for 2 minutes. Add snow peas and capsicum. Stir-fry for a further 2 minutes, or until tender-crisp. Add cooked noodles, mirin and soy sauce to pan and toss together until well combined. Step 4 Slice tuna thickly and serve over noodles and vegetables.
Tuna and udon noodle salad: Toss baby spinach through tuna and noodles.
Warm tofu noodle salad: Thinly slice store-bought marinated tofu. Toss through leftover udon noodles and microwave until warm.
