Baked apple rings with caramel sauce

Full ingredients list:
- 3/4 cup plain flour
- 1 tablespoon caster sugar
- 1/2 teaspoon ground cinnamon
- 2/3 cup sparkling apple juice
- 2 egg whites, lightly beaten
- 4 Golden Delicious or Pink Lady apples, peeled, cored
- cooking oil spray
- 1/3 cup light caramel topping
- 4 scoops low-fat vanilla ice-cream

Instructions and steps:
Step 1 Preheat oven to 200°C. Line a baking tray with baking paper. Place flour, sugar and cinnamon into a medium bowl. Stir to combine. Stir through juice and egg whites.
Step 2 Trim ends from apples, then cut each apple horizontally into three even slices.
Step 3 Spray a large frying pan with oil and place over high heat. Dip half the apple slices in cinnamon batter and shake off excess. Cook for 1–2 minutes on each side, or until browned. Transfer to baking tray. Repeat with remaining apple slices and batter.
Step 4 Bake for 12–15 minutes, until apples are tender. Divide apple rings among serving plates, drizzle with caramel topping and serve with ice-cream.
Replace the ice-cream with low-fat vanilla custard.
