Full ingredients list:
- cooking oil spray
- 1 onion, chopped
- 3 cloves garlic, chopped
- 1 carrot, chopped
- 1 stalk celery, chopped
- 4 lamb shanks (800g total), trimmed
- 2 cups reduced-salt beef stock
- 2 cups red wine
- 4 cups mashed potato, to serve
- 4 cups steamed green vegies, to serve

Instructions and steps:
Step 1 Spray a large saucepan with oil and place over medium heat. Add onion, garlic, carrot and celery and cook, stirring, for 5 minutes, until softened.
Step 2 Add lamb, stock and wine to saucepan. Bring to the boil, then reduce heat. Cover and simmer gently for 2–3 hours, until meat is tender and separating from the bones. Serve with mash and steamed green veg.
