Full ingredients list:
- cooking oil spray
- 2 onions, finely sliced
- 1 clove garlic, thinly sliced
- 3/4 cup skim milk
- 1/2 cup Philadelphia Light Cream for Cooking (60% less fat)
- 800g potatoes, scrubbed, very thinly sliced (about 2–3mm)
- 1/2 cup grated light cheese
- 1 tablespoon fresh thyme

Instructions and steps:
Step 1 Preheat oven to 200°C. Spray a frying pan with oil and place over medium heat. Gently cook onions and garlic until softened and slightly brown.
Step 2 In a bowl, whisk together milk and cream. Set aside. Spray a large baking dish with oil. Place potato slices in a layer on the bottom of the dish, slightly overlapping at the edges. Place a third of the onion mixture over the top and drizzle with a couple of tablespoons of the milk mixture. Repeat layering potatoes, onion and milk, finishing with a layer of potato. Pour remaining milk mixture evenly over the top.
Step 3 Cover with baking paper, then foil and bake for 1 hour. Remove from oven and sprinkle with parmesan and thyme. Place under a hot grill, uncovered, for 10 minutes, until cheese is melted and golden.
