- 800g beef roast, trimmed
- 1/4 cup wholegrain mustard
- 2 tablespoons chopped parsley
- 2 tablespoons thyme, chopped
- 1/4 cup fresh breadcrumbs
- 1 tablespoon oil
- cooking oil spray
- 6 cups Roasted vegies
- 6 cups steamed green veg

Step 1 Preheat oven to 160°C. Combine mustard, herbs, breadcrumbs and oil. Coat beef with mixture. Place beef into a large roasting dish. Cook for 50–55 minutes, or until cooked to your liking. Spray with oil several times during cooking.
Step 2 Pierce beef with a skewer. Juices will run clear when cooked. Remove from oven and rest for 10 minutes before slicing. Serve with Roast vegies and green veg.
