Full ingredients list:
- 800g small chat potatoes, halved
- cooking oil spray
- 4 zucchinis, sliced
- 1 red onion, cut into thin wedges
- 250g punnet cherry tomatoes
- 2 lemons
- 4 x 125g white fish fillets
- 2 tablespoons chopped parsley

Instructions and steps:
Step 1 Preheat oven to 200°C. Put potatoes into a roasting pan and spray with oil. Roast for 30 minutes, or until golden.
Step 2 Add zucchini, onion and tomatoes to pan. Toss to combine and spray with oil. Squeeze the juice of 1 lemon over vegetables. Bake for 10 minutes.
Step 3 Place fish on top of vegetables and season to taste. Bake for 10 minutes, or until fish fillets are cooked through. Cut remaining lemon into wedges to serve with fish and roasted vegies. Garnish with parsley.
Replace the white fish with salmon or chicken fillets.
Use white fish like ling or perch.
