Full ingredients list:
2 tablespoons reduced-salt soy sauce
1 lemon, zested, juiced
1cm fresh ginger, peeled, finely grated
2 carrots, roughly grated
250g soba noodles
500g sirloin steak, trimmed
2 cups steamed broccoli
2 green onions, finely sliced
2 cups baby spinach

Instructions and steps:
Step 1 Combine soy sauce, zest, juice and ginger in a small bowl. Add carrot and set aside to marinate.
Step 2 Cook noodles according to packet instructions. Drain.
Step 3 Spray a large frying pan with oil and place over high heat. Cook steak 2–3 minutes each side for medium-rare, or until cooked to your liking. Loosely cover and rest for 5 minutes.
Step 4 Return pan to medium heat and add broccoli and onion. Cook for a 3–4 minutes. Add carrot mixture and cook for 1 more minute. Remove pan from heat and add spinach. Toss until slightly wilted.
Step 5 Thinly slice beef. Serve vegies over noodles and top with beef slices.
Replace the lemon zest and juice with a grapefruit or an orange.
Boost the vegie content by adding capsicum, snow peas and bean sprouts.
This recipe is not suitable for those following a no-added-salt diet.
