Udon noodles with grilled Asian chicken and snow peas

Full ingredients list:
600g chicken thigh fillets, trimmed
270g dried udon noodles
300g snow peas, thinly sliced diagonally
300g red capsicum, thinly sliced
60ml Asian-style salad dressing (we used Chang’s Oriental Salad Dressing)

Instructions and steps:
Step 1 Spray a chargrill pan or large frying pan with oil and place over medium-high heat. Cook chicken for 3–4 minutes each side or until cooked through. Remove from pan and set aside.
Step 2 Cook noodles according to packet instructions, adding snow peas in the last minute of cooking. Drain well and transfer to a large bowl.
Step 3 Thinly slice chicken and add to noodles and snow peas. Add capsicum and dressing to bowl and toss gently to combine. Serve immediately.
Try sprinkling salad with some lightly toasted sesame seeds.
