Chicken pasta with broccolini, roasted capsicum and feta

Full ingredients list:
- 320g short pasta (such as casarecce)
- 2 bunches broccolini, trimmed, cut into long florets
- 300g chicken breast fillets, thinly sliced
- 200g store-bought roasted red capsicum strips, drained
- 2 teaspoons lemon zest
- 1 tablespoon lemon juice
- 75g reduced-fat feta, crumbled

Instructions and steps:
Step 1 Cook pasta according to packet instructions, adding broccolini in the last 2 minutes of cooking time. Drain well.
Step 2 Meanwhile, spray a large frying pan with oil and place over high heat. Cook chicken, stirring occasionally, for 5 minutes, or until golden. Add capsicum and lemon zest. Cook, stirring, for 2 minutes.
Step 3 Add pasta, broccolini, lemon juice and feta to pan. Toss to combine and season with ground black pepper before serving.
Swap the chicken for a 425g can tuna or salmon in spring water. Make it more colourful by adding carrots and baby corn.
