Step 1 Preheat oven to 160°C. Toast star anise in a small frying pan over high heat for 30 seconds, until fragrant. Add soy sauce and honey and bring to the boil. Remove from heat.
Step 2 Line a shallow baking dish with foil, with overhang on long sides of dish. Place fish on foil and coat both sides in honey mixture. Cover with overhanging foil. Bake for 15–18 minutes, or until cooked.
Step 3 Meanwhile, place peas and 1/3 cup water into a saucepan and place over medium heat. Cook, covered, for 8 minutes, or until heated through. Drain and transfer peas to a food processor. Add wasabi and process until almost smooth.
Step 4 Make apple salad. Combine oil, vinegar and soy sauce in a large bowl. Add apple, chilli, shallots, salad greens and mint. Toss gently to combine. Serve salmon with mash and apple salad.
