Full ingredients list:
- 600g potatoes, thinly sliced
- cooking oil spray
- 500g lean beef mince
- 1 onion, finely chopped
- 420g can Mexican chilli beans
- 400g can tomatoes with capsicum and onion
- 1/2 cup 50% reduced-fat shredded cheddar cheese
- 1/3 cup light sour cream
- 2 green onions, finely chopped

Instructions and steps:
Step 1 Preheat oven to 190°C. Steam potatoes for 8–10 minutes, until slightly tender.
Step 2 Meanwhile, spray a large frying pan with oil. Add mince and brown, using a wooden spoon to break up any lumps. Add onion and cook for 3–4 minutes. Add beans and tomatoes and cook for another 4–5 minutes.
Step 3 Spray a large ovenproof dish with oil. Arrange half the potatoes over base. Spoon mince mixture over potatoes. Top with remaining potatoes. Spray with oil, sprinkle with cheese and bake for 25 minutes.
Step 4 Top with with sour cream and onions before serving.
Make it vegetarian: Omit mince and add tinned lentils.
