Full ingredients list:
- 300g snow peas
- 1 bag (120g) store-bought mesclun mix lettuce leaves
- 2 large cucumbers, sliced lengthways into ribbons using a vegetable peeler
- 2 tablespoons chopped chives
- 2 tablespoons fat-free balsamic dressing

Instructions and steps:
Step 1 Blanch snow peas in boiling water for 1 minute, or until bright green and tender-crisp. Refresh under cold water or in a bowl of iced water. Drain.
Step 2 Combine snow peas with all other ingredients and toss to combine. Serve immediately.
Serve with a pasta or lasagne to ensure you get your greens!
