- 200g sweet potato, peeled
- 250g carrots, peeled
- 200g potatoes, peeled
- 250g parsnips, peeled
- cooking oil spray
- freshly chopped herbs (like rosemary or thyme)
- freshly ground black pepper, to season

Instructions and steps:
Step 1 Preheat oven to 200°C. Line two baking trays with baking paper.
Step 2 Using a vegetable peeler or mandolin, cut vegies into thin slices. Spread chips in a single layer onto trays, spray with oil, sprinkle with herbs and season with black pepper.
Step 3 Bake for 20–30 minutes, turning halfway through cooking, until chips are crisp and golden. Allow to cool before eating.
