Full ingredients list:
- 2 eggs
- 1/2 cup caster sugar
- 1/4 cup canola or vegetable oil
- 1 cup self-raising flour
- 1/2 teaspoon baking powder
- 1/2 cup ground almond meal
- 2/3 cup canned pie apple
- 1/2 cup frozen blueberries

Instructions and steps:
Step 1 Preheat oven to 180°C. Line a 12-hole baking tray with paper muffin cases.
Step 2 In a large bowl or mixer, combine eggs and sugar, beating for 5–6 minutes, until airy and light in colour.
Step 3 Add oil and mix. Fold through remaining ingredients, except blueberries, carefully.
Step 4 Mix in blueberries and divide mixture among muffin cases. Bake for 20 minutes until golden and risen.
Save 150kJ, 1g fat
Store muffins (without icing) in an airtight container for 2 days, or freeze in a resealable bag for up to a month.
