Step 1 Preheat oven to 200°C. Spray a non-stick frying pan with oil and brown beef fillet on all sides. Set aside for 20 minutes, or until meat has cooled down.
Step 2 Re-spray pan with oil and add onion. Cook over medium heat for 5 minutes, or until softened. Add mushrooms and cook over high heat, stirring, for 3–4 minutes or until softened. Add balsamic vinegar and cook until liquid has evaporated. Stir in cornflour until well combined.
