- cooking oil spray
- 600g potatoes, peeled, cut into 1cm-thick slices
- 600g pumpkin, peeled, cut into 1 cm-thick slices
- 1 brown onion, sliced
- 3/4 cup skim milk
- 1/2 cup grated parmesan

Instructions and steps:
Step 1 Preheat oven to 200°C. Spray a 6-cup capacity (1.5L) ovenproof dish with oil. Cook potato slices in a saucepan of boiling water for about 10 minutes, until just tender. Layer with raw pumpkin and onion in dish then pour milk over vegies.
Step 2 Tightly cover with foil and bake for 1 hour, or until pumpkin, potato and onion are tender and cooked. Remove foil and sprinkle with parmesan. Cook for another 15 minutes, or until golden. Stand dish for 5 minutes before serving. Try serving with roast chicken and salad.
