125g reduced-fat table spread
1/2 cup soft brown sugar
1 1/4 cups wholemeal flour
1/2 cup plain flour
1 teaspoon baking powder
1 teaspoon ground ginger
1/2 cup apple purée
1/2 cup rolled oats
1 tablespoon reduced-fat table spread
3/4 cup icing sugar
2 teaspoons ground ginger
1 tablespoon honey
1 teaspoon water
1/4 cup crystallised ginger, chopped

Instructions and steps:
Step 1 Preheat oven to 180°C. Spray a 30cm x 21cm baking tin with oil.
Step 2 In a large bowl, combine table spread and sugar and beat until creamy. Add remaining slice ingredients and beat well (the mixture becomes quite sticky). Spoon into greased baking tin.
Step 3 Bake for 30–35 minutes, until a skewer comes out clean.
Step 4 Meanwhile, combine icing ingredients (except ginger) in a saucepan. Heat until combined. Allow to bubble, then quickly pour over base just as it is removed from oven.
Step 5 Sprinkle with crystallized ginger and cut into squares while still warm. Leave to cool in tin, then place in fridge for 1–2 hours to set.
Will keep in an airtight container for 5 days.
