Warm broccoli salad with cashews

- 500g (6 cups) broccoli florets
- cooking oil spray
- 3 cloves garlic, thinly sliced
- 1/3 cup raw unsalted cashew nuts, roughly chopped

Instructions and steps:
Step 1 Cook broccoli in a large saucepan of boiling water for 3 minutes or until bright green and tender-crisp. Refresh under cold running water and drain well.
Step 2 Spray a large frying pan or wok with oil and place over high heat. Add garlic and cashew nuts and cook, stirring, for 1–2 minutes, or until cashews are golden. Add broccoli, and cook, stirring, for a further 2–3 minutes, or until heated through. Season with pepper and try serving with Beef pot pies.
