Step 1 Spray a large frying pan with oil and place over high heat. Cook beef, in batches, for 5 minutes, or until browned all over. Remove from pan and set aside.
Step 2 Spray pan with a little more oil and place over medium-high heat. Add onion, capsicum, carrot and garlic. Cook, stirring, for 5–7 minutes, or until softened slightly. Add paprika, caraway seeds and tomato paste. Cook, stirring, for 2 minutes or until fragrant.
Step 3 Add stock and 2 cups cold water. Bring to the boil. Reduce heat to medium-low and simmer, uncovered, for 1 hour 15 minutes or until beef is tender. When goulash is almost ready, cook pasta according to packet instructions. Microwave steam beans until tender-crisp. Top pasta with goulash, garnish with parsley and serve with beans.
