Full ingredients list:
- 550g lean pork
- 200g rice stick noodles
- cooking oil spray
- 1 small onion, finely chopped
- 2 cloves garlic, finely chopped
- 2 teaspoons ginger, crushed
- 3 tablespoons salt-reduced soy sauce
- 400g frozen stir-fry vegetables

Instructions and steps:
Step 1 Cut pork into bite-sized pieces. Place into a large pan and add 1 cup boiling water. Cover pan and cook over medium-high heat until water has evaporated (this will take about 20–25 minutes).
Step 2 While pork is cooking, prepare noodles. Place noodles into a large heatproof bowl and cover with just enough boiling water to submerge. Leave to soak for 6 minutes until softened. Drain then cut into slightly shorter pieces using a knife.
Step 3 Once pork is cooked, remove from pan and pat with kitchen towel. Wipe out pan and then spray lightly with oil. Return pork to pan with onion, garlic and ginger and stir-fry for 3–4 minutes.
Step 4 Add noodles to pork, toss lightly then pour soy sauce over mixture. Cook for 2 minutes.
Step 5 Add vegetables and stir-fry for 2–3 minutes until warmed through. Serve garnished with fresh coriander.
