Broad beans with rough mint pesto

Full ingredients list:
- 1/4 cup finely chopped mint leaves
- 6 raw cashews, finely chopped
- 1/2 small lemon, zested, juiced
- 1 clove garlic, crushed
- 500g frozen broad beans, thawed, peeled

Instructions and steps:
Step 1 Combine mint, cashews, lemon zest and juice and garlic in a heatproof bowl. Season with black pepper.
Step 2 Bring a saucepan of water to the boil over high heat. Add broad beans and boil for 2 minutes, or until heated through. Drain, then add to pesto mixture in bowl. Toss to coat. Serve.
Try serving with roast lamb and potatoes.
