Full ingredients list:
- 2 navel oranges
- 300g mixed salad leaves
- 1 large Lebanese cucumber, trimmed, halved, thinly sliced
- 1 tablespoon olive oil
- 2 teaspoons white wine vinegar

Instructions and steps:
Step 1 Peel oranges and remove white pith. Cut orange segments over a bowl, allowing any juices to fall into bowl. Reserve juice.
Step 2 Place salad leaves, cucumber and orange segments into a salad bowl and toss to combine. Whisk together oil, vinegar and 1 tablespoon of the reserved orange juice. Drizzle dressing over the salad. Try serving with marinated lamb chops and couscous.
