Full ingredients list:
- 1 wholegrain bread roll (see tip)
- 2 teaspoons wholegrain mustard
- 2 tablespoons low-fat ricotta
- 50g sliced rare roast beef
- 1 small Roma tomato, sliced
- 1/2 small Lebanese cucumber, sliced
- large handful baby rocket leaves

Instructions and steps:
Step 1 Spread one side of roll with mustard and the other side with ricotta. Top bottom half of roll with roast beef, tomato, cucumber and rocket leaves. Top with other half of roll.
