Step 1 Spray a large frying pan with oil and place over medium-high heat. Add onion, capsicum, carrot, corn, celery, zucchini and garlic and cook, stirring, for 10 minutes. Add 1–2 tablespoons water if the mixture is sticking.
Step 2 Add mince. Cook, breaking up with the back of a spoon. Stir in pesto, tomatoes and 1 cup water. Simmer for 15 minutes until sauce becomes thick. Season with black pepper.
Step 3 Meanwhile, cook fettucine in a saucepan of boiling water according to packet directions. Drain pasta and add spinach.
Step 4 Stir until leaves are wilted. Add parsley. Serve pasta topped with mince mixture.
