Barbecued asparagus with feta and tomato vinagrette

Full ingredients list:
- 3 bunches asparagus, woody ends trimmed
- cooking oil spray
- 50g reduced-fat feta, crumbled
- chopped fresh parsley, to serve
- Tomato vinaigrette
- 2 tomatoes, deseeded, chopped
- 1 clove garlic, halved
- 2 teaspoons olive oil
- 2 teaspoons balsamic vinegar

Instructions and steps:
Step 1 Preheat barbecue grill or plate to medium-high. Spray asparagus with oil. Add to barbecue and cook, turning often, for 3–4 minutes, or until asparagus is just tender. Transfer to a serving platter.
Step 2 To make tomato vinaigrette, place tomatoes, garlic, oil and vinegar into a small food processor. Cover and blend until you reach a smooth consistency.
Step 3 Pour through a sieve into a small bowl. Season with freshly ground black pepper.
Step 4 Drizzle dressing and sprinkle feta over asparagus to serve.
Try serving with grilled fish, potato slices and baby rocket.
