Seared tuna with soba noodle salad

Full ingredients list:
270g dried soba noodles
4 green onions, thinly sliced
1 medium carrot, cut into matchsticks
1 bunch baby pak choy, thickly sliced
2 tablespoons oriental salad dressing
2 teaspoons rice bran oil
2 tablespoons reduced-salt soy sauce
2 teaspoons wasabi paste
4 x 150g tuna steaks
1/4 cup finely chopped fresh coriander
cooking oil spray
fresh coriander leaves, to serve

Instructions and steps:
Step 1 Cook noodles in a large saucepan of boiling water, until tender. Drain. Refresh under cold water. Drain again, then transfer into a large bowl. Add onion, carrot, pak choy and dressing to bowl. Toss to combine.
Step 2 Meanwhile, combine oil, soy sauce and wasabi in a shallow dish. Add tuna and turn to coat. Sprinkle tuna with coriander. Spray a chargrill pan with oil and place over high heat. Cook tuna for 1 minute on each side, or until cooked to your liking. Slice tuna thinly.
Step 3 Serve sliced tuna on noodles, sprinkled with coriander leaves.
Try soba noodles with chicken, beef or pork (cooking times will vary).
Like it hot? Add another teaspoon of wasabi.
