- 4 ripe peaches, halved, stones removed
- 2 tablespoons brown sugar
- 100g reduced-fat fresh ricotta
- 1/2 cup low-fat vanilla yoghurt
- 1 teaspoon lemon zest

Instructions and steps:
Step 1 Place peaches into a shallow, ovenproof dish with cut sides up. Sprinkle peaches with sugar. Heat peaches under a grill for 2–3 minutes, or until warmed and sugar has caramelised.
Step 2 Meanwhile, combine ricotta, yoghurt and lemon zest in a bowl until smooth. Serve with grilled peaches.
Try replacing peaches with plums, apricots or nectarines. Sprinkle with a dash of cinnamon.
