Soft Mexican tacos with coleslaw

Full ingredients list:
- 400g lean beef, cubed
- 1 tablespoon Mexican seasoning
- 4 tablespoons chopped fresh mint
- cooking oil spray
- 500g ready-made coleslaw
- 1 red onion, sliced
- 1 punnet cherry tomatoes, halved
- 3 green onions, chopped
- 1 small cucumber, sliced
- 8 soft taco shells
- 4 tablespoons natural low-fat yoghurt, to serve

Instructions and steps:
Step 1 Toss beef in seasoning and half the mint. Spray a non-stick frying pan with oil and place over medium-high heat. Add beef, half at a time, and cook until evenly seared. Remove and set aside. Keep warm.
Step 2 Mix coleslaw with salad vegies. Warm taco shells in microwave. Separate each shell onto plates.
Step 3 Place some coleslaw and salad into each shell. Top with beef. Serve tacos with remaining chopped mint and yoghurt.
