Full ingredients list:
- 300g penne
- 2 cups Brussels sprouts, leaves peeled, quartered
- 3 spring onions, sliced
- 3 small smoked chorizo sausages, thinly sliced
- 4 zucchinis, cut into small chunks
- 2 cups rocket
- 2 tablespoons grated reduced-fat parmesan cheese

Instructions and steps:
Step 1 Cook pasta according to packet directions. Add Brussels sprouts to water in last 3–4 minutes of cooking time. Drain, reserving 1/4 cup pasta water, and set aside.
Step 2 Meanwhile, spray a large frying pan with oil and place over medium heat. Add spring onions and chorizo. Cook for 5 minutes, or until chorizo is lightly browned. Add zucchini. Stir-fry for 5–8 more minutes.
Step 3 Reduce heat to low. Add rocket, pasta and pasta water. Stir well. Add half the parmesan and toss through.
Step 4 Serve topped with remaining parmesan and freshly ground black pepper.
Try replacing chorizo with extra-lean beef sausage.
