Smoky beef burgers with roast tomatoes

Full ingredients list:
8 Roma tomatoes, halved lengthways cooking oil spray
2 teaspoons chopped fresh rosemary leaves
400g lean beef mince
1 clove garlic, crushed
2 tablespoons no-added-salt tomato paste
3 tablespoons smoky barbecue sauce
1/2 cup dried breadcrumbs
1 egg, lightly beaten
4 small wholegrain rolls, halved, toasted
1 cup rocket leaves

Instructions and steps:
Step 1 Preheat oven to 200°C. Place tomato halves on a baking tray, cut-side up. Spray lightly with oil and sprinkle with rosemary. Bake for 30 minutes, or until cooked and soft; set aside to cool.
Step 2 Meanwhile, put mince, garlic, tomato paste, barbecue sauce, breadcrumbs and egg in a medium bowl; stir to combine. Divide mixture to form 4 patties.
Step 3 Heat barbecue or grill to medium-high heat. Spray patties with a light coating of cooking oil and cook for 4-5 minutes per side, or until cooked through.
Step 4 Serve burgers on toasted rolls with roast tomato and rocket.
Freeze it! At the end of step 1, put tomato in a plastic container; freeze. At the end of step 2, put patties between sheets of baking paper in a plastic container and freeze. To thaw, put tomato and patties in fridge overnight. Heat tomato in a small frying pan set over medium heat.
